Ragnar 2012 was so much fun! We have a little saying..what happens in the Ragnar van stays in the Ragnar van! It always alot of fun and u definately see some interesting things! My husband is like our team mascot and always runs one of his legs in a speedo.This year he had a mullet wig and a head-band that went with it! He was very famous, he was asked by so many people to get his picture taken. He is probably plastered all over face book and does not even know it! He made the coolest Ragnar hitch hauler to put our coolers in! I will post a pic! It lit up at night! I want to thank Corinne who volunteers every year for our team, Sometimes its hot and thank-less but she does it with a smile! Thank you Corinne..we love u!Its fun to share Ragnar with so many of my clients.. it makes me proud!
I took my son up hiking to Adams canyon! Its a great workout and at the end you get to see a beautiful waterfall. I will post a picture of that as well!
Next weeks boot camp class will be held on Thursday evening at 7 pm!

*Each run will be 10 dollars..and will need to be signed up for ahead of time just like you would a race. This shows your commitment and gives you something to work towards! You must be signed up by monday the 25th! There will be gatorade and water available on the route! Lets celebrate July with our commitment to fitness!

So I had a hard time working out a boot camp for June...I will be having a boot camp style class once a week thru June. This week it is on Thursday morning at 6 am. Its a full hour and will cost 15$. I need to know by tonight if you plan to attend. I will post next weeks class by sunday night> It will probably change every week.

Mexican Stuffed Peppers with Quinoa & Black Beans
Serves: 8 Ingredients
4 bell peppers (any color), sliced in half stem-to-tip, seeds removed
1c quinoa, uncooked
1/2 medium onion, diced
1 (15oz) can black beans, drained and rinsed
1 roma tomato, seeded and diced
1 (4oz) can diced green chiles (don’t drain)
1/4c cilantro, minced
1/4tsp salt
1/4tsp pepper
olive oil, if desired
Monterrey Jack, grated - use as a garnish
cheddar cheese, grated
1 recipe red enchilada sauce (or 1 (28oz) can)
Instructions
Add quinoa and onion to a large saucepan with 2 cups of water and a pinch of salt. Bring to a boil over medium-high heat. Boil 5 minutes, cover, turn off heat and let steam 15 minutes. Fluff with a fork.
In the meantime, microwave pepper halves 2-3 minutes to soften slightly. (Prepared this way, the peppers should come out crisp-tender. If you want them crisper, you can omit this step.)
Pour quinoa/onion mixture into a mixing bowl. Stir in black beans, tomato, green chiles and their juices, cilantro, 1/4 tsp salt, and 1/4 tsp pepper. If the mixture seems to dry, drizzle in a bit of olive oil (I didn’t need any).
Pour enchilada sauce into a 9×13″ baking dish. Divide filling among peppers. Nestle stuffed peppers into the enchilada sauce. Sprinkle with cheeses.
Cover the pan with foil and bake at 375 degrees 25-30 minutes. Remove foil and cook about 5 minutes longer. Serve peppers drizzled with enchilada sauce.

Congratulations to Sybil...she ran her half in 2:53> Way to go! Kristen did her 100 mile bike ride...congrats!
Some of you are asking for the June boot camp dates so you can get it on the calendar...I will start working on that and post it soon.
Wishing Ami Fry a fast recovery. She had surgery on her hip last week. She is amazing and always so positive. I know many of you have got to know her at boot camps.
Ruth is getting married on Thursday..finally! Wishing the new couple a happy and joyful day!
I also want to give a little shout out to Colette and Mike...I have just seen such big improvements in them. They are changing physically, but mentally I can really see how it is bringing such a positive change as well!
Stay in balance> Remember if you are off balance in one small area of your life, it throws you off balance in another area. Its hard to find balance, but you must seek it! There you will find you feel the best. Do not live with negative thoughts. Fill your mind with positive things. What are your priorities? Are you sure they are the right ones?

Kristen and I just got back from Tacoma and ran the Tacoma half... I want to thank her for running it with me! it has been a goal and a vision of mine for the last 4 years.I was so glad to have someone to share that with. It is a hilly course with great scenery! I ran it in 2:07 and Kris ran it in 2:48! I also want to wish Sybil and Mandy good luck on their half coming up in a week!
