I had Niki and Mandy over for lunch today.. and they loved my dessert. Niki asked me to share this recipe:

Pumpkin Mousse
1 large pkg. suger-free vanilla pudding
1 cup pumpkin
2 cups skim milk
1 1/4 cup fat free cool whip
1/2 tsp pumpkin pie spice
Mix pudding, milk, and spice together. Fold in cool whip. Chill in fridge.
I make it all up and then put in those small dixie cups. I think its like 50 calories per cup.
